Happy Monday friends!! ๐Ÿค— what better way to celebrate the day than with some cookies!! I made this recipe last week and completely forgot to share it!! (Whoโ€™s surprised? Not me) but itโ€™s here now and thatโ€™s all that really matters! Since i made it last week and wasnโ€™t writing down the recipe as i went (that would be ridiculous) i now am struggling to remember all the goods that went into these. The only thing i canโ€™t remember is if i added almond milk, so please if the batter is too dry just add a little as you go! Iโ€™m sorry Iโ€™m the worst, but on the plus side theyโ€™re vegan, gluten free, sugar free and theyโ€™re delicious so maybe thatโ€™ll make up for it! Let me know if you try them! ๐Ÿ™‚ VEGAN COOKIES RECIPE: ๐Ÿ’ž 1 cup oat flour ๐Ÿ’ž 1/2 cup almond flour ๐Ÿ’ž 1/4 cup nut butter of choice ๐Ÿ’ž 1/4 cup unsweetened applesauce ๐Ÿ’ž 1 (5.3oz) container of almond milk yogurt (I used raspberry flavored) ๐Ÿ’ž 2 chia eggs (mix two tablespoons chia seeds with about 6 tablespoons water and let it thicken up) ๐Ÿ’ž 1 tsp vanilla extract ๐Ÿ’ž 1 tsp baking powder ๐Ÿ’ž 1 tsp baking soda ๐Ÿ’ž pinch of salt ๐Ÿ’ž chocolate chips (optional) Preheat the oven to 350 and line a baking sheet. Start by making your chia eggs. To do this mix 2 tablespoons chia seeds with and 6 tablespoons of water and set aside. Then in a large bowl put all your ingredients in and mix together. After your โ€œeggsโ€ have formed stir them in and mix together. Once everything is well incorporated, stir in chocolate chips if youโ€™re using them. I just made these and they are soooooo good! Mine came out more like wonderfully moist scones, and they are incredible. I didnโ€™t have all of the ingredients (which NEVER stops me!) so I used quinoa flour, spelt flour, and whole oats in place of the oat and almond flours, and I added diced apricots instead of chocolate chips, adding to the scone-like experience. YUM! Will absolutely make these again - thank you!!
