La carbonara, perché sia tale, deve avere questi ingredienti se si cambia completamente la ricetta non è più carbonara ma pasta con condimenti a caso.

Guanciale is difficult to find outside of Italy. So if it's substituted with pancetta or other kind of bacon, it wouldn't shock me. Same with replacing pecorino with parmesan. Still makes it a good carbonara imho
